Cauliflower Tacos

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • Kosher salt and black pepper
  • 1 1/2 cups almond milk
  • 1 1/2 cups panko bread crumbs
  • 1 medium head cauliflower, cut into bite-size florets
  • Cooking spray

    Prep Coating: Mix flour with chili powder, cumin, garlic powder, cayenne, salt, and pepper. Add almond milk and stir to make a thick batter. Place panko in a separate bowl.

    Coat Cauliflower: Dip florets into milk mixture, letting excess drip off, then coat in panko breadcrumbs.

    Air Fry: Cook cauliflower in batches at 400°F / 204°C for 15 minutes, flipping halfway and spraying with cooking spray.

    Assemble: Layer tortillas with crispy cauliflower, avocado, pickled slaw, cilantro, and drizzle with sriracha mayo. Serve with lime wedges.
