Season: Season chicken with salt and pepper.
Prep: Place egg in shallow bowl. In a second shallow bowl, combine bread crumbs and panko.
Breading: Dip chicken in the egg, then into the breadcrumb mixture and shake off excess and place on large dish or cutting board. Spray both sides of the chicken generously with olive oil.
Air Fry: Cook the chicken in batches at 400°F / 204°C, 5 to 6 minutes each side, until the chicken is cooked through and crispy golden on the outside. Serve with lemon wedges.
