Prep: Pound the thicker end of the chicken to make the sides level so they can cook evenly.
Water: Fill a large bowl with 6 cups lukewarm water, add 1/4 cup kosher salt, stir to dissolve
Soak: Add chicken breasts to water and let them sit refrigerated 1 to 1.5 hours to brine. Remove from water, pat dry with paper towels, discard water.
Season: In a small bowl, combine ¾ tsp salt, remaining spices. Spritz the chicken with oil and rub all over, then rub spice mix over the chicken.
Air Fry: Cook at 380°F / 193°F in batches for 5 minutes each side, 10 minutes total until browned on the outside and cooked through inside.
