Loaded Zucchini Skins

Ingredients

  • 2 medium zucchini (about 1 lb total)
  • 2 slices turkey bacon
  • Olive oil cooking spray
  • 1 cup shredded cheddar
  • 1 large avocado
  • 3 cherry tomatoes, finely chopped
  • 1 tbsp finely chopped red onion
  • 1 tbsp fresh lime juice
  • 1 tsp fresh cilantro, plus more for serving
  • 1 small jalapeño, seeded and finely chopped
  • Kosher salt
  • Black pepper

    Cook Bacon: Air fry bacon at 350°F / 176°C for 5 minutes, flipping halfway. Cool and chop.

    Prep Zucchini: Halve zucchini lengthwise and crosswise. Scoop into 1/4-inch thick boats, spray and season.

    Cook Zucchini: Air fry at 400°F / 204°C for 7 minutes until tender.

    Add Cheese: Fill with cheddar, air fry 1-2 minutes until bubbly.

    Make Topping: Mash avocado with tomatoes, onion, lime, cilantro, jalapeño and salt.

    Finish: Top with guacamole mixture, bacon, cilantro and jalapeño.
