Eggplant Fries

Ingredients

  • 1 medium eggplant
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan
  • 1 large egg
  • Italian seasoning
  • Garlic powder
  • Marinara sauce for dipping

Instructions

    Prep: Cut eggplant into 1-inch fries, salt and let drain.

    Coat: Dip in egg, then panko-Parmesan mixture.

    Air Fry: Cook at 400°F / 204°C for 8 minutes, flip, cook 7 minutes more.

    Serve: Immediately with warm marinara sauce.
