Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp baking powder
  • 1 1/2 tsp olive oil
  • Optional seasonings (lemon-pepper, za'atar, or miso-ginger)

    Dry Brine: Rub chicken with salt, pepper, and baking powder mixture. Refrigerate 1-24 hours uncovered.

    Season: Drizzle with oil and optional seasonings.

    First Cook: Air fry at 400°F / 204°C skin-side down for 12 minutes.

    Finish: Flip skin-side up, cook 6-8 minutes more until 175°F / 79°C internal.
