Lemon Garlic Chicken Spiedini

Ingredients

  • 2 lbs chicken thighs, cut into 1.5-inch pieces
  • 1/2 cup olive oil
  • 1/4 cup white wine
  • 3 tbsp lemon juice, divided
  • 4 cloves garlic, minced
  • 2/3 cup Italian breadcrumbs
  • 2/3 cup panko
  • 1/2 cup grated Parmesan
  • 4 tbsp butter
  • Fresh parsley
  • Seasonings (salt, pepper, red pepper flakes, oregano)
  • 6-8 inch skewers

    Marinate: Mix oil, wine, lemon juice, garlic, and seasonings. Toss with chicken and marinate 30-60 minutes.

    Coat: Mix breadcrumbs, panko, Parmesan, and seasonings. Coat marinated chicken, thread onto skewers.

    Air Fry: Cook at 390°F / 198°C for about 12 minutes until golden and internal temp reaches 165°F / 65°C.

    Finish: Melt butter with remaining garlic and lemon juice, add parsley, drizzle over chicken.
